1 tbsp olive oil
2 med yellow onions, diced
3/4 tsp salt
1/2 tsp black pepper
1 c fresh flat leaf parsley
4 eggs
3/4 c half-and-half
8 ounces Gruyere cheese, grated
1/8 tsp ground nutmeg
1 frozen piecrust in a tin

Directions:
Directions:
Heat oil in skillet and cook onions, salt, and papper about 5-7 minutes. Add parsley and cook 2 more minutes.

Whisk together eggs and half-and-half. Stir in Gruyere cheese, nutmeg, salt and pepper,and onion mixture.

Place pie crust on a foil lined baking sheet. Pour egg mixture into the piecrust. Bake at 375 for about 40 minutes until knife comes out clean.

Gruyere is expensive but makes all the difference in this quiche. Smoked Gruyere adds good flavor too. Add other ingredients such as crumbles sausage, broccoli, or spinach if you wish.
