2 medium cucumbers - peeled, halved lengthwise, seeded and thinly sliced
1T salt
4T rice vinegar
2T fresh lime juice
2T reduced sodium soy sauce
2T smooth peanut butter
1 clove garlic
1t chopped fresh ginger
4 salmon fillets (about 5 ounces)
1/2 small red onion, very thinly sliced

Directions:
Directions:
Press sliced cucumbers in a kitchen towel to dry off then toss in a bowl with 1T salt.

Combine 2T vinegar, 1T lime juice, soy sauce, peanut butter, garlic, ginger and 1T water in blender and puree.

Grill salmon, skin side down at medium high for 3 minutes or until skin shrinks and separates. Flip and cook another 4 minutes until done.

Toss cucumbers with remaining 2T vinegar, 1T lime juice, and sliced onions. Refirgerate until serving.

Serve salmon and top with cucumbers mix. Drizzle sauce over all.
