4 large tomatoes, cut into half inch cubes
1 lb. Brie, torn into small pieces, removing the rind
1 cup chopped fresh basil
3 cloves garlic, minced
1 cup plus 1 tbsp. olive oil
2 1/2 tsp. salt
1/2 tsp. freshly ground pepper
1 1/2 lbs. linguine
freshly grated Parmesan cheese

Directions:
Directions:
Combine tomatoes, Brie, basil, garlic, 1 cup olive oil, 1/2 tsp. salt and pepper in large serving bowl. Cover and let sit at room temperature about 2 hours. Bring water to a boil, adding 1 tbsp. oil and salt. Cook linguine. Drain and immediately toss with tomato and cheese mixture. Serve with freshly grated Parmesan cheese and freshly ground pepper.
