20oz chopped frozen spinach
14oz can artichokes, drained and chipped
1T fresh jalapeno, seeded
1t minced garlic
1/4c minced onion
2c Monterey Jack cheese, grated
8oz cream cheese
1c freshly grated Parmesan cheese or 1/2c goat cheese
1t Tabasco pepper sauce
1/2t Creole seasoning
1c half and half
1/2c mayo
1 small tomato chopped for garnish

Directions:
Directions:
Defrost spinach and squeeze out all water. Combine with all other ingredients. Bake at 350º until bubbly, approx 30minutes, or in a crock pot. Sprinkle top lightly with additional creole seasoning and garnish with tomato. Serve with tortilla chips, crackers or bread. Fried crumbled bacon may also be added to the mixture.
