Dough: 2 sticks margarine
1 8oz package cream cheese
3 cups of flour

Cream together margarine and cream cheese, work in the flour. Chill dough for 1 hour.

Filling (may want to double):
3 eggs
2 cups light brown sugar
2 tbsp. melted butter
2 tsp. vanilla

Directions:

Grease mini cupcake tins and set aside.

Beat together the filling ingredients. Shape dough into 1" balls, place in tins and press to shape a shell. I found that using a mini tart shaper to start the shells and then finishing it off by hand works the best. Sprinkle the bottom of the cups with chopped walnuts then fill with the filling.

Bake at 350º for 20 min or until edges are golden brown.
