1 tbsp. butter
1 tbsp. olive oil
1 medium onion, diced
3 garlic cloves, diced
1 tsp. crushed red pepper (less for less heat)
1/2 lb. hot Italian sausage
1/2 lb. chicken, cubed
1 can rotel
1 c. heavy whipping cream
5 tbsp. chopped parsley
1 c. grated cheese
1 lb. penne pasta

Directions:
Directions:
Start water boiling for pasta. Melt butter with oil in large skillet. Add onion and garlic, saute on medium heat. Add sausage, chicken, and crushed pepper. Cook through. While sausage and chicken are cooking add penne to boiling water. Once sausage and chicken are cooked, add can of rotel with juices and let simmer 3 minutes. Add cream and simmer until sauce thickens. Stir in 3 tbsp. parsley and salt and pepper to taste. Once pasta is finished, drain and add to sauce. Simmer 4-5 minutes. Add cheese, remaining parsley, and serve hot!
