1 - 14 oz. can vegetable broth
1-1/4 c. orzo
1 - 14 oz. can diced tomatoes with basil, garlic and oregano, undrained
1 - 15 oz. can black beans, rinsed and drained
1 c. broccoli, fresh or frozen
1 c. cauliflower, fresh or frozen
1 lg. carrot, sliced thinly
2 Tbsp. fresh parsley, chopped
1/2 c. Parmesan cheese, grated

Directions:
Directions:
In 10-inch skillet heat broth to boiling. Stir in orzo and return to boiling. Cover and simmer 10 - 12 min. until liquid is absorbed.
Stir in tomatoes, vegetables and beans. Cover and cook over medium heat until tender, approx. 10 min.
Sprinkle with parsley and cheese and serve.
