1 c. plus 2 Tbsp heavy cream
1/2 c. sugar
3 Tbsp cold water
1 pkg. gelatin (or 2 tsp)
1-3/4 c. buttermilk
2 tsp vanilla
1/8 tsp salt
Berry Sauce:
1/2 pkg fresh or frozen strawberries, sliced in half
1 sm. pkg blueberries
1 sm pkg raspberries
2 Tbsp brown sugar
1/2 stick of butter
1/2 of a fresh orange squeezed
Grand Marnier (optional)

Directions:
Directions:
In a small bowl add cold water and sprinkle gelatin over top. Let stand 5 min. Do not stir.
In medium sauce pot over medium heat add heavy cream, buttermilk, sugar, and salt. Heat until sugar dissolves, about 5 min. Add vanilla and remove from heat.
After gelatin is firm, add it into the warm cream mixture and gently stir until it dissolves. You may need to turn the heat on low to do this.
Pour mixture into Pyrex ramekin dishes and refrigerate at least two hours or overnight.
For sauce:
Melt butter in a large skillet. Add brown sugar and dissolve. Add all the fruit and saute on medium heat until some fruit breaks down. Add fresh orange juice and Grand Marnier. If desired, carefully light fruit until alcohol is evaporated. Flame will go out on its own.
Demold panna cotta by taking a knife and going around the sides of the cups. or dip in warm water.
Invert each panna cotta onto a dessert plate and spoon warmed berry mixture over top and down sides.
