2 c. shredded zucchini
3 eggs
2 c. sugar
3/4 c. canola oil
2 tsp vanilla
2 c. flour
2/3 c. unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
3/4 c chocolate chips (optional)

Peanut Butter Frosting
1/2 c. peanut butter
1/3 c. butter, softened
1 Tbsp milk
1/2 tsp vanilla
1-1/2 c. powdered sugar

Directions:
Directions:
Stir together zucchini, eggs, sugar, oil, and vanilla.
Add dry ingredients, mixing well. Stir in chocolate pieces. Pour batter into 24 muffin tins lined with paper baking cups.
Bake at 325º about 25 min. until toothpick inserted in center comes out clean.
Frosting:
Beat together ingredients until smooth. After adding powdered sugar, add additional milk until desired consistency.
