Pie crust:
2 cup sifted flour
1 tsp salt
2/3 cup shortening
5-7 Tbsp cold water

Pie Filling
1 3/4 cup sugar
3 Tbsp flour
1/8 tsp salt
1/4 cup butter, soften
4 large eggs
1 1/2 tsp lemon rind
1 large lemon
1/2 cup +2 Tbsp water

Preheat oven to 400º

Dough:
Sift flour with salt. Cut in shortening until particles are the size of small peas. Sprinkle 5 to 7 T cold water over mixture tossing lightly with fork until dough is moist enough to hold together. Form into two balls.

Roll out half of pastry on lightly floured pastry cloth or board to circle 1 inch larger than inverted 9" pie pan. fit loosely into pie pan.

Pie Filling:
Combine sugar, flour, salt and blend in 1/4 c soft butter, mix thoroughly. Add eggs (well beaten). (Reserve 1 teaspoon egg white for crust.) Blend sugar mixture and eggs well until smooth. Grade lemon rind from lemon. Peel lemon. Cut peeled lemon into paper thin slices (a little more then 1/3 c). Add water, lemon rind and lemon slices to sugar mixture. Blend well. Turn lemon filling into pastry-lined pan. Roll out remaining pastry. Cut slits to allow escape of steam. Place over filling. Fold edges of top crust under lower crust; seal and flute edge. Brush with egg white and sprinkle with sugar and cinnamon.

Bake in moderately hot oven 400º 30 to 35 minutes. (Cover edges of pie dough with foil if needed to prevent crust from getting to brown.)

Delicious served with fresh whipping cream.

This recipe won $7,500 award in the 1953 Pillsbury's Bake Contest. It is a wonderful spring or summer pie. If you like lemon this pie is truly an award winner! This is one of my favorite pies ever!
