Ingredients:  
1/4 cup olive oil (works using only enough olive oil to generously coat the bottom and then a couple tablespoons to coat the vegetables)
2 large sweet potatoes, sliced or cubed
4 red potatoes, cubed
1 large onion, sliced into rings
1 t. (I increase to 1 T.) minced garlic
2 green bell peppers, sliced
2 red bell peppers, sliced
2 carrots, shredded
1/4 cup Italian style seasoning (or to taste)

Directions:
Preheat oven to 350ºF.
Coat the bottom of a 9 x 13 inch baking dish with oil, reserving 2 T. In a bowl, toss sweet potatoes with red potatoes, onion and approximately 1 T. oil. Place in pan and sprinkle with Italian seasoning. Combine garlic, green and red bell peppers, seasoning, and remaining oil. Layer on top of potatoes and layer shredded carrots last. Cover with aluminum foil.
Bake for approximately 45 min until potatoes are baked through and tender; remove foil cover and stir.
Change oven temperature to 425º and bake mixture until browned on top.
