1 1/2 lb. cooked, deboned salmon
1 - 1 1/2 cups rolled oats or bread crumbs (optional)
1 1/4 T lemon juice
2 eggs
1/2 cup diced onion
1/2 cup diced celery
1/4 cup diced carrots
hint of butter
1/2 t. salt
2 dashes Tabasco sauce
CHEESE SAUCE
1 T. flour
1 T. butter
1 1/2 cups milk
1 1/2 cups cubed cheddar cheese

2 cups steamed broccoli

Directions:
Directions:
Saute onion, celery, and carrots in the butter. Mix together all the ingredients and press into a non stick loaf pan. Bake at 350ºF for 30 to 40 minutes. Prepare the sauce and steam broccoli so that they are ready when salmon is finished cooking.
SAUCE
Melt the butter and mix in the flour on low heat. Whisk in the milk and heat. Slowly melt the cheese into the white sauce, stirring constantly. Remove from heat.

Remove loaf from the oven and turn pan onto a platter. Arrange broccoli on both sides. Drizzle with cheese sauce and serve any remaining sauce on the side.
