1/2 cup butter
1 cup water, boiling
1/4 tsp salt
1 3/4 cup flour
4 eggs
4 cups vegetable oil
granulated sugar

Directions:
Directions:
Melt butter in heavy pot of boiling water, add salt and flour and beat vigorously. Remove from fire as soon as mixture leaves sides of pan. Transfer to mixing bowl, cool slightly. Add eggs, one at a time, beating after each addition.

Heat oil to 375º. Dip tablespoon first in oil, then in batter and drop batter on paper towels to drain. Roll in sugar and serve hot.
