My mamaw's rice pudding Recipe

2 cups water
1 cup long-grain white rice
1/8 t. salt
2 qt. whole milk
2 c. half-and-half
2 c. sugar
4 large eggs
2 T. vanilla

Directions:
Directions:
1.Bring water to a boil, add rice and salt. Cover, and simmer till water is absorbed, and rice is tender.

2.Meanwhile,gradually heat milk, 1/2 and 1/2, and sugar in a heavy dutch oven over medium heat,stirring occasionally, till just about to boil.

3. Add rice to dutch oven and cook 10-15 minutes, stirring occasionally.. Remove from heat.

4. Whisk eggs in a large bowl. Gradually whisk in 2-3 cups hot rice mixture, till eggs are tempered. Return mixture to dutch oven and cook 10-12 minutes over medium-low heat, stirring several times, till mixture thickens slightly. Remove from heat and stir in vanilla. Let pudding cool until warm, then cover surface with plastic wrap and chill.

Personal favorite of mine, just like my Mamaw made when I was a little girl. Ultimate comfort food. This recipe can be halved, or it can be doubled. Great for breakfast or for dessert.
