1 c. cooked carrots
3/4 c. white sugar
1 c. margarine
1 egg
1 tsp. almond flavoring/extract (very important)
2 c. flour
2 tsp. baking powder
1/4 tsp. salt

Directions:
Directions:
add everything, except dry ingredients, to carrots. Beat till light and fluffy. Stir in dry ingredients with spoon. Drop onto ungreased baking sheet. Bake at 375 for 9-12 minutes or until a light brown on the bottom. Ice while warm with almond flavored icing.
