2 c. unbleached bread flour
2 c. whole wheat flour
1/4 c. bran, oat or wheat
1/4 c. packed brown sugar
1 T. baking powder
1 t. baking soda
1 t. salt
1/4 c. butter or margarine, cubed
1 3/4 buttermilk (at room temperature)
1 egg

Directions:
Preheat oven to 375ºF. In a large mixing bowl combine flours, bran, sugar, baking powder, soda, and salt. Using a pastry blender, food processor or two knives, cut in butter until mixture resembles coarse crumbs. Combine buttermilk and egg; add all at once to flour mixture, stirring with a fork to make a soft dough. Turn out onto floured surface and knead gently 10 times. Shape into a round ball and place on greased baking sheet. Cut X-shaped slash in top. (If desired, sprinkle additional bran on top.) Bake about 50 to 55 minutes or until loaf sounds hollow when tapped. Serve warm.
