3/4 cup shortening (butter or regular works)
1 cup firmly packed brown sugar, light or dark
1/2 cup granulated sugar
1 egg
1/4 cup water
1 1/2 teaspoon vanilla
1 cup sifted all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3 cups rolled oats (regular, NOT old-fashioned)
2 cups your choice of "add-ins", such as raisins, nuts, coconut, chocolate chips, chopped dates, dried cranberries, snipped dried apricots, etc.

1. Beat shortening, sugars, egg, water, and vanilla together with electric mixer until creamy. (I put this in my big stand mixer and let it beat for several minutes, scraping occasionally.)

2. Sift together flour, salt, and baking soda; add to creamed mixture; blend well with electric mixer.

3. Stir in oats by hand, then stir in add-ins of your choice. These are also delicious just plain, without any additions.

4. Roll dough into 1 1/2-inch balls with hands.
Bake for 12-15 minutes on ungreased, parchment-lined cookie sheets. Let sit on cookie sheet about 1 minute after removing from oven before transferring to wire rack to cool completely. Store tightly covered.
