1 Smoked Turkey Leg
1 diced onion
3 crushed garlic
1 tsp or more of red pepper flakes
3 bags (or one bag of each) of collard greens, Turnip greens, Mustard greens, Kale- I use a country style mix that contains all of these then use 3 bags worth. It seems like alot but it shrinks down.

1. Place smoked turkey leg in water, bring to boil in one large stock pot about half full of water.
2. Then add onion, garlic and red pepper flakes and simmer for 1-2 hours occassionally adding water.
3. Remove turkey leg take meat off bone throw meat back into pot discard bone.
4. Add the 3 bags of greens, this will fill the entire stock pot, simmer x 45 min
5. In the end it should have some broth to it but not be too soupy. Serve in bowls with butter on top.
