1/2 c. butter or margarine
1 1/2 c. sugar
1 egg
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk or milk with 1 T. vinegar
3 1/2 c. rhubarb or apples
1 T. flour

Topping:
1/4 c. butter or margarine
2 tsp. cinnamon
1 c. brown sugar (packed)

Directions:
Directions:
Cream butter & sugar. Add egg and vanilla. Combine dry ingredients and add alternately with buttermilk. Toss fruit with 1 T. flour and fold into batter. Spoon into greased 9x12" pan. Blend topping ingredients and sprinkle on top of batter. Bake @ 350º for 45 minutes till golden crater surface erupts!

Even though some people consider rhubarb a weed, I love to eat it in most anything baked. Mom also used it to make into sauce to serve with ice cream and juice for punch.
