2 cans canellini white beans, drained & rinsed
2 cups of frozen sweet corn
2 cups of shredded or cubed
chicken or turkey (cooked)
1 sweet onion, diced & sauteed
2 red bell peppers, diced and sauteed
1 pkg. shredded cheese (2 cups)
4 tsp. chile pd.
2 tsp. cumin
1 1/2 pt. chicken stock

Directions:

Combine all of these ingredients in a gallon pot & simmer for about an hour or two on low.
Would be good served with cornbread.
