1/4 - 1/2 c. chopped onions
1/4 c. chopped green pepper (optional)
2 c. cubed ham, farmer sausage, sausage, bacon
1 c. grated cheese
1 doz. eggs
1 c. milk
1 pkg. frozen hash browns,(cube style) thaw
1/2 tsp. salt
1/2 tsp. pepper

brown onion & Peppers if preferred
In a large bowl,combine hash browns, meat, onions & peppers. Spread in a greased 9 x 13 " pan. Using the same bowl whisk together the eggs & milk and stir in the cheese, and seasoning. Pour over the hash brown mixture. Bake @ 350º for 30 minutes or until eggs are set. If preferred, take prepared pan, cover & refridgerate overnight. Uncover and bake in the morning. You may need to add 5 - 10 minutes to baking time. Great for brunch company.

I have used diced farmer sausage baked in the oven for 5-10 minutes, then drained.
Try less meat, or a combination of meats. Leave out the salt, if your meat is already salty. Option: add 1/4 cup of grated cheese on top for the last few minutes of baking.
