8 flour tortillas
4 c.+ shredded cooked chicken or pheasant
2 lbs. Monterey jack cheese, grated
2 lg. cans La Victoria green enchilada sauce

Directions:
Directions:
Coat each tortilla in enchilada sauce. Fill each tortilla with 1/2 c.+ chicken or pheasant and large handful of cheese. Roll up filled tortilla and place in oiled 9x13 baking dish. Tightly wedge each filled tortilla in dish. Repeat with remaining tortillas. Cover enchiladas with enchilada sauce and top with cheese. Bake at 350 degrees for 50-60 minutes. Serve with guacamole and sour cream if desired.
