This recipe for Lazy Shepherd's Pie Casserole, by Rita Thiessen, is from The Dueck Family Cookbook,

families or individuals create heirloom cookbook treasures.
2-3 lbs. lean ground beef 1 medium onion chopped (optional) seasonings to taste (salt, pepper, garlic powder etc.) 1 bag frozen vegetables (corn, peas, mixed) 2 cans of creamed soup (your choice) 1/4 c. milk (optional) 1 package frozen Tater Tots or No Name 1 c. shredded cheese (optional)
Crumble and gently press raw ground beef into a 9 x 13" casserole or pan. Cover with chopped onions (or only on one side). Salt, pepper & season to liking. Combine soup & milk and spread on top of meat. Cover with the frozen vegetables (if using 2 different veggies, put one on each side). Arrange the Tater Tots touching to cover. Bake @350º for 45 - 60 minutes. Sprinkle cheese on top of Tate Tots the last 5 minutes of baking to melt. Let stand 5 - 10 minutes and serve. mmmm
This is always a hit...You can adjust the amounts and size of dish to suit. Makes a great to take casserole as well. Due to food preferences, you can create 2 varieties, by arranging certain toppings on one side (they say it's an allergy!!) Try adding green peppers, mushrooms, carrots etc. enjoy!
