3 carrots, sliced
4 broccoli stalks/flowerettes, chopped
3 zucchini, sliced
12-16 mushrooms, quartered
6 green onions, chopped
6 garlic cloves
6 eggs
2 c.+ milk
4 c.+ grated Monterey jack cheese
1 pie crust recipe for 9X13 pan

Directions:
Directions:
Prepare crust for 9x13 pan and bake until just golden. In olive oil with garlic, saute carrots and broccoli until just tender. Add zucchini and mushrooms and saute until tender. Place veggies in crust. Beat eggs until light. Stir in the milk and cheese and pour over the veggies in crust. Bake at 400 degrees for 30 minutes and 350 degrees for 20-25 minutes. Let stand at least 15 minutes before cutting into squares to serve.
