1 T. butter
1 med. red pepper, chopped
1 med. onion, chopped
1 1/2 c. sliced mushrooms
1/2 lb. sausage (Jimmy Dean)
5 eggs
1 c. Monterey jack cheese
1 pkg. chopped broccoli
1 c. ricotta cheese
1 T. parsley
20 frozen phyllo sheets
1 c. butter, melted

Directions:
Directions:
Melt butter in skillet and saute pepper, onion and mushrooms until tender; remove. In same skillet brown sausage and drain. Add to mushroom mixture. In bowl beat eggs, stir in jack cheese and sausage mixture. In another bowl combine broccoli, ricotta and parsley. Heat oven to 350 degrees. Unroll phyllo sheets. Cover with plastic wrap. Place 1 sheet in 9x13 pan folding to fit. Brush with melted butter and continue layering and buttering 4 more sheets. Spread 1/2 mushroom/sausage mixture over dough. Layer and butter 5 more sheets. Spread with all of the broccoli mixture. Layer and butter 5 more sheet and spread with the remaining mushroom/sausage mixture. Layer and butter 5 more sheets and brush top with butter. Score the phyllo with diamond shape and bake 50-60 minutes until puffed and golden brown.
