Ingredients:	Ingredients: 4 English muffins 4 Canadian bacon or ham slices 8 eggs, cooked as desired 3 egg yolks 1/2 t. salt 1/4 c. lemon juice 1/2 c. melted butter

Directions:	Directions: Prepare hollandaise sauce by combining yolks, salt and lemon juice in blender. With blender whirring, slowly pour butter into mixture until thickened. Set aside. Toast muffins and top with bacon or ham slices and eggs (fried, poached or scrambled). Pour sauce over each muffin and broil until bubbly. Note: Substitute smoke salmon for meat for a real treat.
