1-2 lb. lean hamburger
1 med. onion, finely chopped
4 stalks celery, finely chopped
1 pkg. fresh mushrooms, finely chopped
1 orange pepper, finely chopped
1 red pepper, finely chopped
1 yellow pepper, finely chopped
1 tsp basil
1 tsp thyme
1 tsp oregano
1 tsp parsley
2 bottles spaghetti sauce
1 1/2 c. old Cheddar cheese, shredded
1/2 c. Feta cheese
1 c. Mozzarella, shredded
1 pkg. Express Manicotti noodles

Directions:
Preheat oven to 350° F. Pour 1 bottle of sauce in bottom of 9x13" dish.
Fry hamburger in lg. skillet. Drain. (Return drippings to skillet) Place hamburger in lg. bowl. To skillet add vegetables, thyme, basil, parsley & mushrooms. Cook until tender. Drain. Add to hamburger & combine with 1 cup of the Cheddar & Feta. Stuff Manicotti with mixture using a piping bag or long end of soup spoon. Place stuffed noodles on top of sauce. Add remaining sauce & top with remaining cheese. Sprinkle with oregano. Bake 40-50 min till noodles are tender.

Measurements are only a guideline. Add as much or as little as you wish. Depends on the size of dish you use. End result is well worth the effort!
