3-4 boneless/skinless chicken breasts or 1 rotisserie chicken (shredded)
30 oz mild green enchilada sauce
2 small cans of chopped green chilies
1 bunch of green onions/scallions (chopped)
1 can cream of chicken soup
1 can cream of celery soup
Tostitos© Lime flavored tortilla chips (half bag, crushed)
Sharp cheddar cheese (12 oz, shredded)
Cilantro (1/2 cup, finely chopped)
Cumin, Fresh Minced Garlic, and Chili Powder (to taste)

Preheat oven to 400º

In large Dutch oven, combine cooked and shredded chicken, enchilada sauce, chilies, green onions, cilantro and soups. Add minced fresh garlic, cumin and chili powder to taste and bring to a slow, low boil. Reduce heat and simmer for 20 minutes.

While simmering, crush approximately 2 cups of tortillas chips and layer 9x13 pan. Then pour mixture from Dutch oven over tortilla chips and top with shredded sharp cheddar cheese and top with any remaining crushed tortilla chips.

Bake at 400º for 20-30 minutes or until cheese is golden brown. Let stand for 5-10 minutes and serve with your favorite Spanish rice. Makes 6-8 servings.

This is such a wonderful comfort food! We have carried this recipe with us since I (mom) was a little girl growing up in Arizona. It's perfect for our cold Wisconsin winters and a great leftover. Make it your own (add some chopped celery or shredded corn tortillas, etc) and enjoy!
