Blueberry Stuffed French Toast Recipe

6 Slices Texas Toast or 12 slices of regular white bread.
8 ounces cream cheese,
2 cups fresh or frozen blueberries,
5 Eggs,
1/3 cup Maple syrup,
1 cup milk
Sauce:
1 cup water
3/4 cup white sugar
2 tablespoons cornstarch
2 cups blueberries
2 tablespoons butter

Directions:

Set the bread out on the counter to slightly stale.
Cut the bread into 1 inch cubes. Spray the bottom of a 9"X13" glass baking dish with vegetable spray. Place 1/2 of the bread in the dish. Cube the cream cheese and place on top of the bread. Add the blueberries and then top with bread cubes.
Beat the eggs, maple syrup, and milk. Pour over the bread, cream cheese and berry mixture. Wrap with plastic wrap and refrigerate overnight. In the morning remove the plastic and replace with aluminum foil. Bake for 30 minutes at 350º, remove the foil and bake for an additional 30 minutes. Serve hot with blueberry sauce.
Blueberry sauce:
Cook the water, sugar, cornstarch and 1 cup of berries until it thickens. Add 1 more cup of berries and the butter. Pour over individual pieces of the warm French toast and serve.

This is a mainstay at the 4 star Whitestone Country Inn in Paint Rock, Tennessee which we have been fortunate to visit several times. It is a great dish to prepare ahead for a fancy breakfast or a brunch meal.
