2 tbsp olive oil; 2 tbsp butter; 1 onion, chopped; 1 carrot, chopped fine; 1 rib celery, chopped fine; 2 cloves garlic, minces; 1/4 cup chopped fresh flat leaf parsley; 2 tbsp chopped fresh basil; 1 pound ground beef; 1-1/2 tsp salt; 1/4 tsp fresh ground black pepper; 1/2 cup white wine; 4 cups canned tomatoes with their juice (32 oz can) chopped; 6 tbsp grated Parmesan cheese; 1 pound rigatoni; 1/2 pound mozzarella cheese, grated

Heat oven to 350 degrees. In medium frying pan, heat the oil and butter over low heat. Add the onion, carrot, celery, garlic, parsley and basil and cook until very soft.
Raise the heat to moderate, add the ground beef, salt and pepper until meat is no longer pink. Add the wine and cook until almost evaporated. Add tomatoes with their juice and simmer, covered, for 30 minutes. Stir in Parmesan.
In a large pot of boiling, salted water, cook the rigatoni until almost done, about 12 minutes, drain.
Lightly oil a 3 quart oval baking dish. Toss the pasta with the meat sauce and put half of it in the baking dish. Top with half the mozzarella. Cover with the remaining pasta and top with the remaining mozzarella. Bake until the pasta is hot.
