1 cup butter softened
1/2 cup sugar
1 egg yolk (extra large) save white for wash
1 teaspoon almond extract
2 cups coarse white sugar and 2 cups finely ground almonds mixed together
Raspberry jam with seeds










Directions:
Directions:
Preheat oven to 350º
Cream butter and sugar, yolk and almond extract till smooth
Add flour gradually and mix well.
Roll dough to pie crust thickness 1/8 " and cut cookie ( I use a round glass approx 2"size )
Place combination of coarse sugar and almonds on a plate
Mix egg white with a tablespoon of water and place in a bowl
Brush cut cookie with egg white wash, then dip cookie in almond/sugar mixture and place dab of raspberry jam in middle of cookie
Place cookies on a baking sheet lined with parchment paper .
Bake for 10-12 min till light golden
