2 c. boneless-skinless chicken breast, cubed
1 T. vegetable oil
1/2 c. basil pesto
4 slices provolone cheese
1 focaccia bread (2-inches thick), cut into fourths

Optional:
2 T. red onion, finely chopped
1/2 c. chopped red pepper

Directions:
Directions:
In a skillet, cook chicken in vegetable oil. Cut each piece focaccia in half horizontally. Spread 1 tablespoon pesto on cut sides of each half. Layer bottom halves with one-fourth of the chicken, and cheese (plus optional ingredients if desired). Serve

**If you have a panini grill heat it, place sandwiches on grill. Close grill; grill 3 to 5 minutes or until focaccia is golden brown and cheese is melted.
