3 boneless-skinless chicken breast, cubed
1/2 c. onion, finely chopped
1 clove garlic, finely chopped
2 T. vegetable oil
4 c. chicken broth
3/4 tsp. group basil
1/2 tsp. salt
1/4 tsp. pepper

Optional:
1/4 c. red bell pepper, chopped
1 tsp. ground red chilies

Topping:

3 c. Mexican shredded cheese
3 corn tortilla, cut into strips
1 c. vegetable oil to fry corn tortillas in

To fry tortillas:
1/2 c. vegetable oil

Directions:
Directions:
Trim fat from chicken breast and cut into cubes. In 5 quart pan pour 2 tablespoons of vegetable oil, chicken, onion, and garlic stirring until chicken is no longer pink in middle. Add 4 cups of chicken broth, basil, salt, pepper, and tomato puree (plus optional ingredients of bell pepper and red chilies). Simmer until hot. Cut 3 corn tortilla shells into strips and fry for topping. Serve hot topped with cheese and corn tortilla shells.
