Broccoli florets cut small (handful)
Spinach (2 handful's)
1 teaspoon butter
Lemon Pepper (to taste)
Salt (dash)
4 eggs (beaten)
1/4 cup Cheddar Cheese

Directions:
Directions:
Melt butter in frying pan on medium heat. Add broccoli, lemon pepper, salt and cook until partially cooked (not crunchy but not soft so they stay together). Put the spinach in and cover with a lid so it steams it for a couple of minutes. Add the eggs and cheese and cook until done.

With having minimal time in the mornings but still wanting something that tastes good and is nutritious my roommate and I came up with this! She introduced the broccoli which I thought was going to be weird and I the spinach (have to put that stuff everywhere as those bags from Costco go forever). Amazingly it tastes great! Both of us are lemon freaks so why not lemon pepper?! The kids didn't go for it but sometimes you need to spice your life up despite the kids.
