2 cups of all purpose flour
1/4 tsp salt
1/2 cup canola oil
1/3 cup plus a few Tbsp well chilled non-fat milk

Filling:
6 oz unsweetened apple juice concentrate
2 1/2 Tbsp all-purpose flour
1 tsp cinnamon
1/4 tsp salt
6 medium apples sliced- try different varieties for different flavors (peels add additional nutritional value)
1 Tbsp Heart healthy buttery spread
1/2 tsp nutmeg

Crust:
Combine flour and salt in bowl.
Combine oil and milk in a covered jar and shake vigorously to mix. Make a well in the center of the flour mixture and pour in the oil and milk mixture. Using a pastry blender or working with your fingertips, form a ball. Don't over work.
Divide into 2 balls, one slightly larger than the other one. Roll out the larger on between two sheet of plastic wrap so it is just large enough to cover the bottom and side of a 9 inch pie pan. Roll out the smaller ball for the top.
Filling:
Preheat oven to 450º
In a small saucepan, combine the frozen apple juice, flour, cinnamon and salt. Stir constantly over medium heat until the mixture is thick and bubbly- 3-5 minutes. Peel and slice the apples. Stir them in the apple juice mixture. Pour the mixture into the unbaked pie shell and dot with buttery spread.
Position the top crust over the filling, cutting slits for the steam to escape. Trim and seal the edges. Brush the top very lightly with water and sprinkle with nutmeg, if desired.
Bake at 450º for 15 minutes. Reduce heat to 350º and bake for 30 minutes more.
