1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp baking soda
2 eggs
1 cup partially blended corn (or canned creamed corn)
1/4 Cup oil
1 Cup Sour Cream

Mix together in order given. Pour into greased 8x8 pan or cast iron skillet. Bake at 400 F for 20-25 minutes

Super good as a side dish to almost any meal! Nice and moist, not gritzy like some corn-meal recipe's can be. This recipe is originally from Irene Schellenberg, but I got it from my in-laws! What a small world!
