1 whole tenderloin trimmed

4 strips applewood smoked bacon
1/4 cup brandy
salt and pepper to taste
1 beef bouillon cub
2T. brandy
2T. Wondra flour

Red Wine and Brandy Sauce

3T. butter
2/3 cup sliced fresh mushrooms
1/4 cup sliced green onions
1/8 t. pepper
1 cup hot water
1 cup dry red wine

Directions:
Directions:
Preheat oven broiler to 500 degrees. Place tenderloin on a rack in a broiler pan. Let it soak in the brandy for 15 minutes. Pat dry. Season with salt and pepper. :ay the bacon on top of the meat. Place tenderloin in oven, so that it is 8 inches away from the heating element. Turn meat over, replacing the bacon and broil other side for 10 minutes or until desired doneness. Carve steak and serve with sauce.

Sauce
Put red wine in sauce pan and cook until reduced by half. Add butter to frying pan; add mushrooms, onions. and pepper. Cook 2 minutes. Stir together hot water and bouillon cube until dissolved. Add bouillon and brandy to vegetables' heat to boiling. Boil for 1 minute. Add Wondra while whisking. Heat to boiling, stirring constantly. Boil 1 minute. Yield 1 1/4 cup
