4 (6 oz) skinless boneless chicken breast halves
1/4 tsp salt
1/4 tsp pepper
5 oz shiitake mushrooms, sliced
1/2 cup Marsala wine (dry sherry is a good substitute)
2/3 cups green onions, finely chopped
2 T unsalted butter

Directions:
Directions:
Place each chicken breast in a quart ziplock bag and pound to 1/2 inch thickness
Heat large nonstick skillet over medium high heat. Coat pan with cooking spray, salt and pepper chicken pieces and add to skillet. Cook until done; 5 to 6 minutes. Remove chicken from skillet and keep warm.
Reheat skillet to medium high heat, respray skillet, spray mushrooms and saute until tender stirring frequently.
Add wine and onions. Cook 30 seconds over high heat, reduce heat and add butter stirring until butter melts.
Add chicken to skillet stirring gently.
Serve chicken topped with mushroom sauce.
