Hearty Bean and Bacon Soup Recipe

6 slices of bacon, cooked and reserve bacon grease
olive oil
1 medium onion, finely chopped
3 stalks celery, finely chopped
3 medium carrots, finely chopped
1 bell pepper, finely chopped (red gives best flavor, but green will work fine)
1 teaspoon dried oregano
1 teaspoon marjoram
1/4 teaspoon ground white pepper
1/2-1 teaspoon ground black pepper (I like lots of black pepper & use 1 tsp)
pinch of dried red pepper flakes
Bay leaf
1 Tablespoon dried parsley
1/2 teaspoon chopped garlic (1 clove)
2 15-oz cans Navy or Great Northern beans, drained and thoroughly rinsed
4 cups chicken broth
1 cup water
1/2 teaspoon sugar
salt and pepper

Directions:
1. Add bacon grease and enough olive oil to coat bottom of stock pan or Dutch oven. Heat pan on high. Add vegetables (onion to bell pepper) to stock pot. Stirring frequently, sauté until onion is translucent, about 5 minutes.
2. Add seasonings (oregano to garlic) and sauté one minute.
3. Add beans, chicken broth, and water. Heat to a boil. Turn down heat and simmer 1 hour. Stir occasionally.
4. Chop bacon and stir into soup. Add sugar and stir. Simmer 10-15 minutes.
5. Remove Bay leaf. Season to taste with salt & pepper.

This soup is so good that Mike and Sue wanted to put my recipe in the cookbook too! Other variations - replace water with a bottle of beer and/or replace bacon with sausage or chopped brauts.
