Kosher Salt
12 oz. Whole Wheat Rigatoni

1 28 oz. Can Crushed Tomatoes
1 tbsp. Olive Oil
1 tbsp. Butter (unsalted)
2 Shallots (minced)
2 Cloves Garlic (minced)
1/2 c. Vodka
2/3 c. Heavy Cream
1/2 c. Parmesan Cheese
3 tbsp. Fresh Basil
1/4 c. Prosciutto (minced)
Red Pepper Flakes (optional)

Directions:
Directions:
Cook rigatoni in large pot of boiling, salted water al dente.

Heat large skillet, add butter and olive oil. Cook shallots until clear. Add garlic and cook until tender (do not burn).

Remove from heat - very important!

Thoroughly stir in Vodka and then return to heat. Add crushed tomatoes and simmer for 7 minutes. Add prosciutto and stir in cream. Add basil and red pepper.
