2-9 inch pie pans of baked cornbread
6 slices of toasted bread
2 c. chopped celery
3 c. chopped onion
1/2 lb of butter
2-3 c. of chicken broth
2 eggs
2 hard boiled cooked eggs

Directions:
Directions:
In a frying pan ( Becky uses an iron skillet) saute the onion and celery until yellow and limp. Crumble the cornbread and white toast into small pieces and add to the onion/celery mixture. Add broth until moist. Add chopped hard boiled eggs and slightly beaten eggs. Season well with salt and pepper. Pack into buttered baking dishes. Cover with foil and bake for 45 minutes to a little over an hour at 325. Take the foil off and let it cook about 5 more minutes to get lightly brown.

This is simple and hard to goof up Becky says! I've had it on Thanksgiving at her house. we met in Saudi Arabia and came back as good friends and both lived in Baytown Texas. I love southern food!!!!!!!!
