2 deep dish crusts
8 - 9 Granny Smith apples
1 pint fresh blueberries
½ cup dried sweetened cranberries
¾ cup sugar
¼ cup all-purpose flour
1½ teaspoons grated lemon zest
2 teaspoons fresh lemon juice
dash of salt
3 tablespoons butter, in small pieces

Preheat oven to 400º. Peel and core apples and slice into eights. In a large bowl, combine apples, sugar, flour, lemon zest, salt. Pour half of the mixture into the unbaked pastry pie pan. Sprinkle with half of the cranberries and blueberries, repeat. Drizzle with lemon juice and dot with butter. Place the remaining pie crust over filled pie, seal and flute edges. Cut several small slits in top crust. Place foil around edge. Place in oven, reduce heat to 375 º. Bake for 20 minutes, remove foil and bake another 20 - 25 minutes or until crust is brown and pie juice begin to bubble from the slits on top. Let cool for 45 - 60 minutes before serving.
