1 lb. Beef sirloin or London broil
1 tsp. fresh minced garlic
31/2 cups (32 oz.) beef broth
2 medium carrots, sliced
1/4 tsp. dried crushed thyme
1/2 cup barley
Salt & Pepper to taste

Directions:
Directions:
Cut beef into 1" cubes and cook until brown stirring often. Add garlic and cook until tender stirring frequently so garlic doesn't burn. Add broth, sliced carrots, thyme, salt, pepper. Heat to a boil then stir in barley. Cover and cook over low to medium low heat until barley is done, about 20 -30 mins. Serve with fresh bread or rolls or biscuits. Serves 4
