3 tablespoons olive oil
3 tablespoons mustard-yellow/Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1/3 cup white vinegar
1 4-pound boneless center-cut pork loin roast
1 tablespoon cornstarch
1 cup half-and-half

Directions:
Directions:
Preheat oven to 350 degrees. In a small bowl, mix the oil, mustard,salt, black pepper, red pepper and vinegar. Place the roast, fat side up, on a rack in a roasting pan. Brush with half of the mustard mixture. Bake for 20 minutes. Turn the roast, and brush with the remaining mustard mixture. Continue baking, basting with the pan drippings until done.
Transfer the roast to a platter let stand. Save 1 cup of broth and discard the remaining broth. Leave the browned bits in the bottom of the pan. Place pan over medium heat . In a small bowl, dissolve the cornstarch in 1/4 cup of broth. Stir in the remaining broth. Pour into the pan with the half-and-half. Bring to a simmer stirring up all the brown bits. Reduce heat and simmer until thickened. Season and pour into a sauce boat.
