4 cucumbers
1 onion
1 cup sugar
1/3 cup apple cider vinegar
1 cup water
2 Tbsp. balsamic vinegar or red wine vinegar
1 Tbsp. Salt
1 Tbsp. Lawry’s Garlic Salt
1 tsp. black pepper
1/2 cup light vegetable oil / not olive oil

Peel cucumbers and slice thinly, put in large bowl. Peel and slice onion thinly put in same large bowl.
Put 1 cup of sugar in a 2 cup measuring cup. Pour just enough vinegar into the sugar to make a wet paste. Fill measuring cup with water until it reads 2 cups. Microwave on high until boiling and all the sugar is dissolved. Add balsamic vinegar, salt, garlic salt, pepper, and vegetable oil. Stir together and pour hot liquid over cucumbers and onion. Cover and refrigerate for 2 days stirring twice a day making sure all vegetables are covered.

Note: olive oil will solidify so use a light vegetable oil. The flavor of this dish is sweet and sour. If you taste the liquid it should be strong at first but will become mild after being poured over the cumbers and sitting for 2 days.
