1 ¾ c. flour
2 T. sugar
1 T. baking powder
Dash of salt
1 2/3 c. fat-free milk
3 T.vegetable oil
2 egg whites
1 egg
Toasted pecans (optional)

Directions:
Directions:
Combine flour, sugar, baking powder, and salt in a small bowl. Combine milk, oil, egg whites, and egg in a large bowl; stir well with a whisk. Add flour mixture to wet ingredients, stirring until smooth. Let batter stand for at least 10 minutes.

Coat a waffle iron with cooking spray; preheat. Spoon batter onto hot waffle iron, spreading batter to edges. Sprinkle on pecans if desired. Cook 5 to 6 minutes or until waffle iron signals; repeat procedure with remaining batter.
