1 (12 oz.) can evaporated fat-free milk
1/3 c. low-fat cottage cheese
14 c. grated parmesan cheese
2 eggs
3 egg whites
1/2 tsp. salt
1/4 tsp. freshly ground pepper
1 basic pie crust (frozen or from scratch)
1 (10 oz.) box chopped frozen spinach, thawed and squeezed dry

Directions:
Directions:
Preheat oven to 425º. Whisk milk, cottage cheese, parmesan, eggs, egg whites, salt and pepper. Place pie plate on baking pan. Spread spinach over the pie crust. Pour filing over spinach. Bake 15 minutes and reduce oven temp to 350º. Bake until filing is set, about 20 minutes longer. Cool 10 minutes before serving.
