2 tsp. olive oil
1 lb. uncooked boneless skinless chicken breast
1 tsp. dried thyme or 2 T. fresh and minced
1/2 tsp. salt
1/4 -1/2 tsp. black pepper
3 medium minced garlic cloves
2 c. broccoli florets
1 1/2 c. reduced sodium chicken broth - divided
1 1/2 T. cornstarch
2 c. hot cooked brown rice (keep hot)

Cut chicken breasts into 1 inch pieces. Heat oil in large skillet over medium-high heat. Season chicken on a plate with thyme, salt & pepper. Add garlic to skillet, cook for 1 minute. Add chicken to skillet and cook until browned on all sides, stirring frequently for about 3 minutes. Add broccoli to skillet then cover and cook 2 minutes. Add 1 c. broth, cover again and simmer until chicken is thoroughly cooked - about 5 minutes. Dissolve cornstarch in remaining 1/2 c. broth and then add it to the skillet. Simmer until mixture thickens, stirring constantly about 1 minute. Serve over the hot brown rice.
