1 c thinly sliced celery
2 T butter
1 ½ c sliced green onion
1 ½ lb hot dogs, cut up in chunks
2 pkgs corn muffin mix (8 ½ oz ea)
2 c cheddar cheese, shredded
2 eggs
1 ½ c milk
¼ t pepper
½ t sage
1 t Italian seasoning
Directions:
Directions:
Saute celery in butter 5 minutes.
Add onions for another 5 minutes; set aside. Saute hot dogs until light brown. Add to celery and onions.

Combine eggs, milk and spices in a large bowl. Add hot dog mixture. Stir in cornbread mixes and 1 cup of cheese. Pour into greased shallow baking dish and top with remaining cheese.

Bake uncovered @ 400 for about 20 minutes or until golden brown.
