Good size carrots
Half as many onions as carrots
1 T butter for every 2 to 3 onions
Fresh parsley, finely chopped
Pepper and salt (to taste)

Directions:
Directions:
Slice the carrots and onions very thin and just cover them with water. Season with pepper, salt and parsley. Add butter. Set to simmer over low heat until the vegetables are as tender as you like them.

This works as well with French beans as with carrots.
